Meet a Mom: Caitlyn Edson a Pediatric Registered Dietitian | Capital District Moms

Where are you originally from? How long have you lived in the Capital District?

Born and raised in the Capital District! I grew up in Clifton Park and now my family and I live in the Saratoga Springs area. We love it here!

Tell us a little bit about yourself.

I am a mother of a toddler boy with another little boy on the way. My husband and I will definitely have our hands full this summer with two under two! I am a Pediatric Registered Dietitian with a private practice, Caitlyn Edson Nutrition. I absolutely love helping families feed their little ones, especially since it is such a huge source of stress for so many people. Outside of work I love to spend time with my family, husband, son and dog! We also love to travel and cannot wait until it’s safe to do so again.

What is your favorite thing to do at home with your son?

Of course, cooking with him, what else! I think it’s such a great way to bond with your little ones. Plus, it helps them learn about food, nutrition, and cooking!

Where do you meet with clients?

Currently my practice is all virtual. However, I do hope to meet with clients again in person soon which is done in their homes! This is typically the most comfortable place for kids.

What advice would you give to parents who have picky eaters?

Start working to fix the problem now. I know how hard it can be to have a picky eater, but I’m here to tell you it’s possible to fix. You can start serving only one meal to the whole family!

I would start by only cooking one meal for everyone, and make that a rule. As the parent, it’s your job to decide what to serve and when. It’s your kids’ job to decide whether or not to eat it. Continue to push their palate while serving at least one favorite “safe” food with every meal. If you’re still struggling, that’s what I’m here for.

Who can benefit from your services?

I truly think that most parents would benefit from working with me. Pediatric nutrition is underrepresented in our area and there is not a lot of support available when it comes to feeding our kids. I work with all age groups from babies starting solids to older kids. If you’re nervous about starting solids, or want to learn about baby led weaning, I can work with you to get started. If you have a toddler or elementary age child who’s very picky, we can work on that. If you have a child with a medical condition affecting their food intake, like an allergy, developmental delay, or weight gain difficulty, I can help! If you have a youth athlete, we can work on that. Pediatrics is my passion.
